Raising the Dough
If you are looking for crust that has a light texture, chewy interior and crisp outside, it’s a good idea to raise the dough more than once. Once again the experts suggest this is a process. The first time you raise the dough should be about for four hours and the second time for 8 to 12 hours. Making a better crust takes time, but the results are well worth it.
Oven Heat
Heating the oven to just the right temperature is important too. Some chefs like to cook at 900° while others prefer the 600° range. They all agree that the temperature depends on how you want the skin of your crust – either hard or chewy.
